Just in Time for The Holidays! Christmas Poke Cake (Jell-O Advertisement, Not Dated)




Christmas Poke Cake

1 package (18.5 oz.) Betty Crocker Super Moist White Cake Mix

1 package (3 oz.) Jell-O Brand Raspberry Flavored Gelatin
1 package (3 oz.) Jell-O Brand Lime Flavored Gelatin

2 cups boiling water

1 container (8 oz.) Birds Eye Cook Whip Non-Dairy Whipped Topping, thawed

Prepare cake mix as directed, baking in two 8 inch layer pands, cool.

Place cake layers, top sides up, in two clean 8 inch layer pans; prick each cake with fork at 1/2 inch intervals. Meanwhile, dissolve each flavor gelatin separately in 1 cup of the boiling water.

Carefully pour raspberry gelatin over one cake layer and lime flavor gelatin over second cake layer. Chill 3-4 hours.

Dip one cake pan in warm water for about 10 seconds, then unmold cake layer onto serving plate. Top with about 1 cup of the whipped topping. Unmold second layer and carefully place on first layer. Frost top and sides with remaining whipped topping.  Chill. Garnish with gumdrop holly leaves and berries.

To make gumdrop holly: flatten large green gumdrops on board sprinkled with Jell-0 lime flavored gelatin. Cut into holly leaf shapes.  Cut berries using red gumdrops and Jell-O strawberry flavor gelatin.

Butter 8 slices of bread on one side.

Top buttered bread with 8 slices of cold luncheon meat.

Top meat with cut-outs from 4 slices process American cheese.

To make cut-outs: With a cooky cutter, cut out shape of diamond, heart, dog or any other design from center of the slice of cheese.

Place cut-out pieces of cheese on one sandwich. Put the rest of the slices of cheese on the other sandwich. The meat will show through the space in the cheese, making a silhouette of the cut-out.

Makes 8 open face sandwiches.

6 slices cut from frozen pound cake
4 bars (3/4 oz each) milk chocolate candy
Miniature marshmallows

Place cake slices on ungreased baking sheet. Place 6 or 7 squares of candy on each slice. Arrange marshmallows on candy.

Set oven control at broil and/or 550 degrees. Broil about 5 minutes from heat about 1 minute or until marshmallows are golden brown.

6 servings

Variation:

Toasted Cake S'Mores

Substitute one can of chocolate ready to spread frosting for the candy, spread 1-2 tablespoons frosting on each cake slice.

Hollow out part of a baked potato so it looks like a boat. Fill the hollow with creamed dried beef. Cut a sail from a firm piece of cheese and stand upright in the boat on a toothpick. 

Three mushrooms on edge of potato boat are the three "men".

Cut cone shaped pieces out of tops of cooled, baked cupcakes.

Turn cone shaped pieces upside down for hats.

When ready to serve, fill cavity of each cupcake with a scoop of vanilla ice cream. Make faces with candies.

Set hats on clown heads.

Place on rack under broiler:

3 English muffins, split in half and buttered
6 slices of bacon, cut in half

Toast muffins on one side and remove from rack.

Broil bacon until crisp.

Top each muffin half with thick tomato slice, 2 broiled bacon strips, thin slice of processed cheese.

Return to broiler and broil 5 inches from heat until cheese melts.  Serve at once. 6 Servings.

Corn Roasted on the Coals

Pull back husks and remove silk, replace husks. Soak in ice water 20-30 minutes. Shake off water, lay on hot coals to cook until tender 10-15 minutes for young corn, turning 2-3 times.

Corn Roasted on Grill Over Coals

Remove large outer husks from young, tender corn. Turn back inner husks, remove silk. Spread corn with softened butter, pull husks back over ears, tying with fine wire. Roast on grill over hot coals, turning frequently until done, about 20 minutes. Serve at once with salt, pepper, more butter.

Corn Roasted in Foil on Coals

Same as above, except re-wrap corn in husks, then in aluminum foil. Lay on ash gray coals 10-15 minutes, turning once.

Mulligan Stew

This is from the Campfire Cooking chapter.

In a small amount of hot fat in a heavy frying pan, brown 1 pound stew meat, cut in small pieces.

Add 1 teaspoon salt.

Stir in: 1 can condensed tomato soup, 1 can water.

Cover tightly and let cook slowly until tender (about 1 1/2 hours).  If fire gets too hot, take from heat occasionally to keep at a simmer. When meat is tender, add:

3 carrots,cut in thick slices
3 potatoes, quartered
3 onions, halved

Continue cooking slowly, about 30 minutes.  If there is not enough juice, add water during cooking. If too thin, take off lid and cook sauce until thickened.
