Skillet Meatloaves (Camping & Quick Summer Meals, French's Seasoning Salt Advertisement, Not Dated)



Skillet Meatloaves

1 egg
1/2 cup tomato juice
1 tablespoon French's Minced Onion
1 teaspoon French's Seasoning Salt
1 1/2 lbs. ground beef
1/2 cup fine dry bread crumbs
1 tablespoon oil or shortening
2-3 slices process American cheese

Beat together egg, tomato juice, minced onion, seasoning salt in large bowl. Add ground beef and bread crumbs, mix lightly.  Shape into 5 or 6 small loaves. Heat oil in large skillet, add meatloaves and brown on both sides. Cover, cook over low heat 15-20 minutes, until cooked. Top each with a half slice of cheese during last few minutes of cooking.

5-6 servings.

Corn Roasted on the Coals

Pull back husks and remove silk, replace husks. Soak in ice water 20-30 minutes. Shake off water, lay on hot coals to cook until tender 10-15 minutes for young corn, turning 2-3 times.

Corn Roasted on Grill Over Coals

Remove large outer husks from young, tender corn. Turn back inner husks, remove silk. Spread corn with softened butter, pull husks back over ears, tying with fine wire. Roast on grill over hot coals, turning frequently until done, about 20 minutes. Serve at once with salt, pepper, more butter.

Corn Roasted in Foil on Coals

Same as above, except re-wrap corn in husks, then in aluminum foil. Lay on ash gray coals 10-15 minutes, turning once.

This is from the Campfire Cooking chapter.

In a small amount of hot fat in a heavy frying pan, brown 1 pound stew meat, cut in small pieces.

Add 1 teaspoon salt.

Stir in: 1 can condensed tomato soup, 1 can water.

Cover tightly and let cook slowly until tender (about 1 1/2 hours).  If fire gets too hot, take from heat occasionally to keep at a simmer. When meat is tender, add:

3 carrots,cut in thick slices
3 potatoes, quartered
3 onions, halved

Continue cooking slowly, about 30 minutes.  If there is not enough juice, add water during cooking. If too thin, take off lid and cook sauce until thickened.
