Fiesta Peach Crown

Make raspberry gelatin as directed on package. Add two tablespoons lemon juice. Cool until thick. Place swirl of drained canned cling peach slices in 6 or 8 small round molds. Cover with gelatin. Chill until firm. Unmold. Serve with whipped cream. For Golden Fiesta Crown, use plain gelatin, following directions on package for lemon gelatin.

Peach Sponge Cakes

1/4 cup sugar
1/4 cup water
2 large, fresh peaches
4 sponge cups
Whipped Topping (in a can)
Combine sugar and water, bring to boil, stirring until sugar is dissolved. Chill. When ready to serve, peel and slice peaches, pour syrup over them. Spoon into sponge cups and top with a spiral of whipped cream. 4 servings.
