Baked Apricots
(Boyce Memorial ARP Church Cookbook Kings Mountain NC 1977)
2 cans (No. 303) apricot halves, drained
1 stick margarine
1 1/2 cups crushed Ritz crackers
3/4 cup brown sugar
Layer apricots, brown sugar, crumbs, and magarine (cut into small pieces) in 8 inch square pan or 7 x 11 baking dish. Bake in a 350 degree oven for about 30 minutes.

Apple Barbequed Pork Chops

6 pork chops
2 cups apples
1/2 cup cider vinegar
2 tsp. dry mustard
1/2 cup brown sugar
2 tsp. Worcestershire sauce
1/2 tsp. oregano
1/2 cup chopped onion
Bake for 1 1/2 hours at 350 degrees.

Tomato and Sausage Tart

1 unbaked pie crust
2 tsp. Dijon mustard
1/2 lb. cooked Italian sausage
2-3 sliced tomatoes
1/2 tsp. basil
1/4 cup fresh parsley
1 1/2 cup shredded cheddar cheese
1/2 cup mayonnaise
salt/pepper to taste
Spread mustard over pastry. Bake according to directions for 5 minutes. Sprinkle sausage over shell; layer tomatoes. Sprinkle with basil, parsley and salt and pepper. Mix cheese and mayonnaise, spread over tomatoes, sealing edges. Bake at 400 degrees for 35 minutes.
