Maritime Macaroni (Kraft, The Greatest Food Show in the Land, 1982)

Maritime Macaroni

1 7 1/4-oz box Kraft Macaroni and Cheese dinner
1 6 1/2-oz can tuna, drained, flaked
1/2 tsp. onion salt
1/4 tsp pepper
2 tomatoes, sliced
Kraft grated Parmesan Cheese
1 cup torn fresh bread
1/4 cup Parkay margarine, melted


Prepare dinner as directed on package, except using 1/2 cup milk. Add tuna, onion salt, and pepper, mix lightly. Place half of macaroni mixture in 10 x 6 inch baking dish, top with half of tomato slices. Repeat layers. Sprinkle with cheese. Toss bread with margarine, place around edge of dish. Bake at 350 for 20 minutes.

Serves 4-6

Mallow Fruit Ambrosia

2 cups Kraft miniature marshmallows
1 11-oz can mandarin orange segments, drained
1 cup banana slices
1/2 cup maraschino cherry halves
1/2 cup flaked coconut
1 cup dairy sour cream
2 tablespoons honey

Combine marshmallows, fruit and coconut, mix lightly. Spoon into individual dessert dishes. Combine sour cream and honey; mix well and spoon over fruit. 8 servings.

Lamb Stir Fry

1 cup lamb, cut in bite size pieces

1 tablespoon soy
1 tablespoon sherry
1/2 tsp salt

2 tablespoons oil

3 spring onions, quartered lengthwise and cut in 1 inch sections
1/4 cup bamboo shoots, cut matchstick size

Marinate lamb in soy, sherry and salt. Heat oil in wok and brown onions. Add lamb and bamboo shoots and stirfry 2-4 minutes. Serve at once. This dish goes very fast. Nice with rice or try it with Armenian boulgour for a change.

Waring Blender Drink Recipes: Mint Julep, Pink Lady, Daiquiri

Mint Julep

4 mint leaves
1 tsp sugar
4 oz. bourbon
2 cups crushed ice

Pink Lady

1 egg white
1 tablespoon grenadine
3 oz. dry gin
1/2 cup crushed ice

Daiquiri

1 1/2 tablespoon lime juice
1 tablespoon sugar
3 oz. white label rum
2 cups crushed ice

For all:

Blend all ingredients 10-20 seconds. For Julep, add ice after mint leaves are finely blended.  Serve Julep topped with mint leaves.

1 small onion, chopped
3 tablespoons Wesson Oil
3 tablespoons flour
1 teaspoon salt
dash pepper
1/4 teaspoon tarragon
1 cup chicken broth
1/2 cup milk
2 cups diced cooked chicken
1 egg yolk, slightly beaten
1 tablespoon lemon juice
1/4 cup sherry
1 pimiento, chopped
1 avocado, cubed

Cook onion in Wesson 3 minutes. Mix in flour, seasonings, broth and milk.  Stir while mixture cooks slowly and thickens.  Add chicken, lightly blend in egg yolk, then lemon juice, sherry, pimiento, avocado.  Heat. Serve on toast, 4-6 servings.

Place on rack under broiler:

3 English muffins, split in half and buttered
6 slices of bacon, cut in half

Toast muffins on one side and remove from rack.

Broil bacon until crisp.

Top each muffin half with thick tomato slice, 2 broiled bacon strips, thin slice of processed cheese.

Return to broiler and broil 5 inches from heat until cheese melts.  Serve at once. 6 Servings.

Easy Oven Fried Chicken

1/4 cup fat (half butter)
1 1/2 to 3 lb frying chicken, cut up
1 cup Gold Medal flour or Bisquick
2 tsp salt
1/4 tsp pepper
1/4 tsp paprika

Heat oven to 400 (mod. hot).  Melt fat in shallow baking pan in oven. Meanwhile, wash and dry chicken.

Place flour and seasonings in paper sack. Drop in 2 or 3 pieces of chicken at a time.  Hold sack closed with hand and shake.

Place floured chicken in baking pan in single layer, skin side down. Bake 30 minutes. Turn skin side up and continue baking about 30 minutes, until tender. Serve hot.

So Quick with New Bisquick, 1967

"Bake in onion soup for zippy flavor"

1 envelope (about 1 3/8 oz) onion soup mix
2 cups water
2 cups New Bisquick
1/3 cup cold water
3 tbsp butter, melted
1 can (15 oz.) corned beef hash
1/4 tsp. pepper

Heat oven to 450.  Combine soup mix and 2 cups water in square pan, 9 x 9 x 2 inches. Heat to boiling.

Stir Bisquick, 1/3 cup water and the butter with fork to a soft dough. Beat vigorously 20 strokes. Knead 8-10 times  on lightly floured cloth covered board. Roll dough into rectangle, 12 x 8 inches. Spread hash over dough to within 1/2 inch of edge, sprinkle with pepper. Roll up like a jelly roll. Cut into 9 slices. Place slices cut side down in hot soup. Bake about 30 minutes.  4-6 servings.

NOTE: 1 can (10 1/2 oz) onion soup plus enough water to measure 2 cups can be substituted for onion soup mix.

Chicken and Biscuits

1 can 10 1/2 oz. cream of chicken soup
1/2 cup water
2 teaspoons instant minced onion
1/8 tsp poultry seasoning
1 cup cubed cooked chicken
1/2 cup cooked carrot strips
1/2 cup cooked peas
1/2 cup diced cooked potato
1 cup packaged biscuit mix
1/3 cup milk

1 1/2 quart casserole, blend soup, water, onion and seasoning; add chicken, carrots, peas, and potatoes. Bake at 450 degrees for 15 minutes.

Meanwhile, combine biscuit mix and milk, spoon 8 drop biscuits around edge of casserole. Bake 15 minutes more. 3-4 servings.

Corn Roasted on the Coals

Pull back husks and remove silk, replace husks. Soak in ice water 20-30 minutes. Shake off water, lay on hot coals to cook until tender 10-15 minutes for young corn, turning 2-3 times.

Corn Roasted on Grill Over Coals

Remove large outer husks from young, tender corn. Turn back inner husks, remove silk. Spread corn with softened butter, pull husks back over ears, tying with fine wire. Roast on grill over hot coals, turning frequently until done, about 20 minutes. Serve at once with salt, pepper, more butter.

Corn Roasted in Foil on Coals

Same as above, except re-wrap corn in husks, then in aluminum foil. Lay on ash gray coals 10-15 minutes, turning once.

Undiluted frozen limeade
Fresh fruit, such as watermelon and cantaloupe balls,  fresh pineapple wedges, fresh peach slices, fresh banana slices.

Pour the thawed, undiluted limeade concentrate over fruit in bowl.  Let stand, covered, in refrigerator for a couple of hours. Spoon into chilled sherbet cups. Top with sprig of mint and serve.
